  • 1 lb (450g) ground beef (or chicken substitute)
  • 1 packet taco seasoning
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced pickles
  • 1/4 cup chopped onions
  • 1/4 cup ketchup
  • 1/4 cup mustard
  • 2 tbsp cooking oil

Instructions

  1. Heat 1 tablespoon of oil in a skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart. Mix in taco seasoning and cook for 2-3 minutes. Remove from heat.
  2. Lay tortillas flat on a surface. Spread ketchup and mustard evenly on one side of each. Top with cooked beef, shredded cheeses, pickles, and onions. Fold tortillas in half to seal.
  3. Heat a skillet or griddle over medium with a little oil. Cook folded quesadillas for 3-4 minutes per side until golden brown and crispy, ensuring the cheese melts thoroughly.
