- 1 lb (450g) ground beef (or chicken substitute)
- 1 packet taco seasoning
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced pickles
- 1/4 cup chopped onions
- 1/4 cup ketchup
- 1/4 cup mustard
- 2 tbsp cooking oil
Instructions
- Heat 1 tablespoon of oil in a skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart. Mix in taco seasoning and cook for 2-3 minutes. Remove from heat.
- Lay tortillas flat on a surface. Spread ketchup and mustard evenly on one side of each. Top with cooked beef, shredded cheeses, pickles, and onions. Fold tortillas in half to seal.
- Heat a skillet or griddle over medium with a little oil. Cook folded quesadillas for 3-4 minutes per side until golden brown and crispy, ensuring the cheese melts thoroughly.
Notes
- Allow quesadillas to cool completely before storing.
- Store in airtight containers in the fridge for up to 2 days.
- Reheat in a skillet or microwave, then crisp in a hot skillet if desired.
