- 12 oz pasta of choice
- 2 cups roasted squash cubes
- 1 lb sausage links, sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
- In the same skillet, add minced garlic and cook for 1 minute until fragrant.
- Add roasted squash cubes to the skillet, sauté for 3-4 minutes.
- Return sausage to the skillet, mix well.
- Combine cooked pasta with sausage and squash mixture, toss to coat evenly.
- Garnish with Parmesan cheese and chopped parsley. Season with salt and pepper as needed.
Notes
- Feel free to use spicy sausage for an extra kick.
- Roasted squash can be prepared ahead and stored in the refrigerator.
- For a vegetarian version, substitute sausage with grilled vegetables or plant-based sausage.
