Ingredients

  • 2 cups roasted squash cubes
  • 1 lb sausage links, sliced

  • Fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
  3. In the same skillet, add minced garlic and cook for 1 minute until fragrant.
  4. Add roasted squash cubes to the skillet, sauté for 3-4 minutes.
  5. Return sausage to the skillet, mix well.
  6. Combine cooked pasta with sausage and squash mixture, toss to coat evenly.
  7. Garnish with Parmesan cheese and chopped parsley. Season with salt and pepper as needed.
