- 4 large russet potatoes, thinly sliced
- 2 cups caramelized onions
- 2 cups shredded Gruyere or Swiss cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 teaspoon dried thyme
- Salt and freshly ground black pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- In a skillet, heat olive oil and butter over medium heat. Add onions and cook until golden brown and caramelized, about 20 minutes. Stir in thyme, salt, and pepper.
- Layer sliced potatoes in the prepared dish, topped with a portion of caramelized onions and shredded cheese. Repeat layers until all ingredients are used.
- Cover with foil and bake for 40 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly and golden.
Notes
- Feel free to substitute Gruyere with Swiss or a blend of cheeses for different flavor profiles.
