- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup enchilada sauce
- 8 large flour tortillas
- 2 cups shredded cheddar cheese
- 1 teaspoon chili powder

- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, cook ground beef over medium heat until browned. Add diced onion and minced garlic; cook until softened.
- Stir in chili powder, cumin, salt, and pepper. Pour in enchilada sauce and simmer for 5 minutes.
- Spoon beef mixture onto tortillas, roll them up, and place seam side down in a baking dish.
- Top with shredded cheddar cheese and bake for 20 minutes until cheese is melted and bubbly.
- Garnish with chopped cilantro before serving.

- Feel free to add black beans or corn to the beef mixture for extra texture.
