- 3 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 eggs beaten
- 1 cup panko breadcrumbs
- Oil for frying
Instructions
- In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan, green onions, garlic powder, salt, and pepper.
- Shape the mixture into small balls or puffs and set aside.
- Place flour in one bowl, beaten eggs in another, and panko breadcrumbs in a third.
- Dip each puff into flour, then egg, then coat with breadcrumbs.
- Heat oil in a deep frying pan over medium-high heat.
- Fry the puffs until golden brown and crispy, about 3-4 minutes per batch.
- Drain on paper towels and serve warm garnished with fresh herbs.
Notes
- Use cold mashed potatoes for easier shaping.
- Adjust the amount of cheese according to taste.
- These puffs can be baked in the oven at 400°F (200°C) for 20 minutes if preferred.
