  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • Optional: chopped nuts or chocolate chips for added texture

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or non-stick spray, or line it with parchment paper.
  2. In a large mixing bowl, combine mashed bananas, melted butter, sugar, eggs, and vanilla extract. Stir until well blended.
  3. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add to the wet ingredients, folding until just combined.
  4. In a small bowl, mix extra cinnamon with a little sugar. Pour half of the batter into the loaf pan. Sprinkle with cinnamon-sugar mixture. Add the remaining batter and swirl using a butter knife to create a cinnamon swirl pattern.
  5. Bake for 60-70 minutes until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
