- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups cooked rotisserie chicken, shredded
- 1 package (16 oz) gnocchi
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 3-4 minutes.
- Add minced garlic and cook for another minute.
- Pour in chicken broth and bring to a boil.
- Add shredded rotisserie chicken and gnocchi, cook according to package instructions, about 3-4 minutes.
- Reduce heat and stir in heavy cream and dried thyme. Season with salt and pepper to taste.
- Simmer for 5 minutes, then garnish with chopped parsley before serving.
Notes
- Use store-bought rotisserie chicken for convenience.
- You can substitute heavy cream with half-and-half for a lighter version.
- Serve with crusty bread for a complete meal.
