Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

- In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing well.
- Gradually incorporate the dry ingredients into the wet mixture until just combined.
- Cover the dough and refrigerate for about 30 minutes.
- Mix the brown sugar and cinnamon in a small bowl for the filling.
- Roll out the chilled dough on a floured surface to about ¼ inch thickness into a rectangle.
- Spread the cinnamon sugar mixture evenly over the dough.
- Carefully roll the dough tightly from one edge to form a log.
- Slice the log into approximately 1-inch thick cookies.
- Place the cookies onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes until edges are golden brown. Cool slightly on a wire rack.
- If desired, prepare a glaze by mixing powdered sugar with milk and vanilla, then drizzle over the warm cookies.
