Instructions
- In a large pot, cook the sausage over medium heat until browned. Remove excess fat if necessary.
- Add chopped onion and garlic; cook until fragrant and translucent.
- Pour in chicken broth and bring to a boil.
- Stir in diced carrots, celery, Italian seasoning, salt, and pepper; reduce heat and simmer for 10 minutes.
- Add tortellini and cook until tender, about 3-5 minutes.
- Serve hot, garnished with chopped parsley and grated Parmesan if desired.

- You can substitute Italian sausage with turkey or chicken sausage for a leaner option.
- For added flavor, include a splash of white wine during cooking.
