- 4 slices bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup whole milk or heavy cream
- 2 cups fresh cheddar cheese, shredded
- 1 packet (16 oz) potato gnocchi
- Salt and pepper to taste
- Chopped fresh chives or parsley for garnish
Instructions
- Cook bacon in a large pot over medium heat until crispy. Remove and set aside.
- In the bacon fat, sauté onion and garlic until translucent.
- Pour in chicken broth and bring to a simmer.
- Add the gnocchi and cook until they float, about 2-3 minutes.
- Stir in milk or cream, then slowly add shredded cheddar cheese, stirring until melted and smooth.
- Season with salt and pepper. Top with crispy bacon and herbs before serving.
Notes
- For extra flavor, add sautéed mushrooms or spinach.
- Use gluten-free gnocchi for a GF version.
- Serve with crusty bread for a complete meal.
