- 4 slices bacon, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 pound potato gnocchi
- 1 1/2 cups shredded cheddar cheese
- Salt and black pepper to taste
- Chopped chives or green onions for garnish
Instructions
- Cook bacon in a large pot over medium heat until crispy. Remove and set aside.
- In the same pot, add diced onion and cook until translucent. Add garlic and cook for 1 minute.
- Pour in chicken broth and bring to a boil. Add gnocchi and cook until tender, about 3-4 minutes.
- Stir in heavy cream and shredded cheddar cheese until melted and smooth.
- Add cooked bacon back into the soup. Season with salt and pepper to taste.
- Serve hot, garnished with chopped chives or green onions.

- Adjust cream and cheese for a thicker or lighter soup.
- You can add vegetables like spinach or mushrooms for extra flavor.
