- 4 boneless, skinless chicken breasts, cut into strips
- 2 cups sliced mushrooms
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup sour cream
- 1 cup chicken broth
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat and cook chicken until browned. Remove and set aside.
- In the same skillet, sauté onions, garlic, and mushrooms until soft.
- Stir in paprika, salt, and pepper. Add chicken broth and bring to a simmer.
- Mix in sour cream until smooth.
- Transfer the mixture to a baking dish, add chicken on top, and bake uncovered for 20-25 minutes until bubbly and cooked through.
- Garnish with chopped parsley before serving.
Notes
- You can replace sour cream with Greek yogurt for a lighter version.
- Serve over egg noodles, rice, or mashed potatoes for a complete meal.
