Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken chunks and cook until browned, about 5 minutes.
- Stir in onion, bell peppers, and garlic; cook until vegetables are tender, about 5 minutes.
- Sprinkle Cajun seasoning over the mixture and stir well.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer for 15 minutes to blend flavors.
- Stir in heavy cream, season with salt and pepper, and cook for another 5 minutes.
- Serve hot, garnished with chopped parsley.
