A quick and hearty one-pot Cajun sausage pasta that’s packed with flavor, spice, and creamy textures, perfect for busy weeknights

Ingredients

  • 12 ounces (340g) penne or fettuccine pasta
  • 1 pound (450g) smoked sausage, sliced
  • 1 red bell pepper, sliced
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 1 cup (240ml) heavy cream
  • 1 cup (120ml) chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet or pot, heat olive oil over medium heat. Add sausage slices and cook until browned. Remove and set aside.
  2. In the same skillet, add chopped onion and sliced bell pepper; sauté until softened, about 3-4 minutes.
  3. Add minced garlic and Cajun seasoning; cook for another minute until fragrant.
  4. Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer.
  5. Add uncooked pasta to the sauce, stirring well. Cover and cook, stirring occasionally, until the pasta is al dente and the sauce has thickened, about 10-12 minutes.
  6. Return the cooked sausage to the skillet, mix well, and season with salt and pepper to taste. Serve hot garnished with chopped parsley if desired.
