- 12 ounces (340g) penne or fettuccine pasta
- 1 pound (450g) smoked sausage, sliced
- 1 red bell pepper, sliced
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons Cajun seasoning
- 1 cup (240ml) heavy cream
- 1 cup (120ml) chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large skillet or pot, heat olive oil over medium heat. Add sausage slices and cook until browned. Remove and set aside.
- In the same skillet, add chopped onion and sliced bell pepper; sauté until softened, about 3-4 minutes.
- Add minced garlic and Cajun seasoning; cook for another minute until fragrant.
- Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer.
- Add uncooked pasta to the sauce, stirring well. Cover and cook, stirring occasionally, until the pasta is al dente and the sauce has thickened, about 10-12 minutes.
- Return the cooked sausage to the skillet, mix well, and season with salt and pepper to taste. Serve hot garnished with chopped parsley if desired.

- Adjust Cajun seasoning for spice preference.
- Use gluten-free pasta to make it gluten-free.
