- 2 lbs boneless, skinless chicken breasts, cubed
- 4 cups fresh spinach, chopped
- 8 oz cream cheese, softened
- 1 cup grated mozzarella cheese
- 1 cup shredded Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add cubed chicken, salt, pepper, and Italian seasoning. Cook until browned and cooked through. Remove and set aside.
- In the same skillet, sauté garlic until fragrant. Add chopped spinach and cook until wilted.
- In a mixing bowl, combine softened cream cheese, mozzarella, Parmesan, and cooked spinach mixture.
- Add cooked chicken into the mixture and stir until well coated.
- Transfer the mixture into a greased baking dish, spread evenly.
- Bake for 20-25 minutes until bubbly and golden on top.
Notes
- You can substitute cooked turkey or chicken thighs for added flavor.
- For added zest, sprinkle red pepper flakes into the mixture before baking.
