- 2 cups cooked chicken, shredded (for example, from chicken)
- 2 ripe avocados, sliced
- 8 slices of bread (your choice of white, whole grain, or sourdough)
- 1 cup shredded cheese (cheddar, American, or mozzarella)
- 1/4 cup mayonnaise or Greek yogurt
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Optional: chopped fresh herbs like cilantro or parsley
- Butter or olive oil for toasting
Instructions
- In a bowl, combine shredded cooked chicken with mayonnaise or Greek yogurt, lemon juice, salt, pepper, and chopped herbs if using. Mix well until creamy.
- Spread the chicken mixture evenly on a slice of bread. Top with slices of ripe avocado and shredded cheese. Cover with another bread slice.
- Brush the outside of the sandwich with butter or olive oil. Place in a preheated skillet or nonstick pan and cook over medium heat until golden brown and cheese melts, about 3-4 minutes per side. For extra crispiness, use an air fryer.
