- 4 slices bacon, chopped
- 1 pound boneless, skinless chicken breasts, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 pound gnocchi
- 1 cup heavy cream
- 1 cup shredded Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, cook bacon over medium heat until crispy. Remove and drain on paper towels.
- Add olive oil to the same pot and sauté diced chicken until cooked through. Remove and set aside.
- In the same pot, sauté onions and garlic until fragrant and translucent.
- Add chicken broth, bringing to a boil. Stir in gnocchi and cook until tender about 3-4 minutes.
- Reduce heat to low, stir in cooked chicken, bacon, heavy cream, and Parmesan cheese. Simmer until heated through.
- Season with salt and pepper. Serve hot, garnished with chopped parsley.
Notes
- You can substitute turkey bacon for a leaner version.
- For a gluten-free option, use gluten-free gnocchi or cauliflower gnocchi.
