Ingredients

  • 4 slices bacon, chopped
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound gnocchi
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, cook bacon over medium heat until crispy. Remove and drain on paper towels.
  2. Add olive oil to the same pot and sauté diced chicken until cooked through. Remove and set aside.
  3. In the same pot, sauté onions and garlic until fragrant and translucent.
  4. Add chicken broth, bringing to a boil. Stir in gnocchi and cook until tender about 3-4 minutes.
  5. Reduce heat to low, stir in cooked chicken, bacon, heavy cream, and Parmesan cheese. Simmer until heated through.
  6. Season with salt and pepper. Serve hot, garnished with chopped parsley.
