Ingredients

  • 1 pound beef stew meat, cubed
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 can diced tomatoes
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, brown the beef cubes over medium heat until cooked through. Remove and set aside.
  2. In the same pot, sauté onions, garlic, carrots, and celery until tender.
  3. Add the beef back to the pot along with beef broth, diced tomatoes, paprika, cumin, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Stir in heavy cream and cook for another 5 minutes until heated through.
  6. Garnish with fresh parsley before serving.

  • For a thicker soup, add a tablespoon of flour or cornstarch mixed with water during simmering.
