Ingredients

- 1 pound beef stew meat, cubed
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups beef broth
- 1 cup heavy cream
- 1 can diced tomatoes
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, brown the beef cubes over medium heat until cooked through. Remove and set aside.
- In the same pot, sauté onions, garlic, carrots, and celery until tender.
- Add the beef back to the pot along with beef broth, diced tomatoes, paprika, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Stir in heavy cream and cook for another 5 minutes until heated through.
- Garnish with fresh parsley before serving.
Notes
- For a thicker soup, add a tablespoon of flour or cornstarch mixed with water during simmering.
- You can substitute beef with ground turkey or chicken for a leaner option.
