  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
  2. Add chopped onion and garlic; cook until translucent.
  3. Stir in diced carrots and celery; cook for 5 minutes.
  4. Add corn, diced tomatoes, beef broth, cumin, paprika, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Stir in heavy cream and cook for another 5 minutes until heated through.
  7. Garnish with fresh parsley before serving.
