- 1 lb ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes
- 4 cups beef broth
- 1 cup heavy cream
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
- Add chopped onion and garlic; cook until translucent.
- Stir in diced carrots and celery; cook for 5 minutes.
- Add corn, diced tomatoes, beef broth, cumin, paprika, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Stir in heavy cream and cook for another 5 minutes until heated through.
- Garnish with fresh parsley before serving.
Notes
- Feel free to add in chopped potatoes for extra heartiness.
- Adjust spice levels to taste.
