- 1 lb boneless, skinless chicken breasts, diced
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1 1/2 cups orzo pasta
- 4 cups chicken broth
- 1 cup shredded Gruyere or Swiss cheese
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). In a large skillet, heat olive oil and butter over medium heat. Add onions and cook until caramelized, about 15 minutes.
- Add garlic and thyme, cook for another minute.
- In a large mixing bowl, combine diced chicken, salt, pepper, and a tablespoon of olive oil. Season and set aside.
- In a baking dish, spread caramelized onions on the bottom. Layer diced chicken over onions.
- Add orzo pasta evenly over the chicken and onions. Pour chicken broth over everything.
- Cover with foil and bake for 25 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until cheese is bubbly and golden.
Notes
- Ensure onions are caramelized well for maximum flavor.
- Use Gruyere or Swiss cheese for authentic flavor, but you can substitute with mozzarella.
- Great served with a fresh green salad for a complete meal.
