A comforting casserole combining tender chicken, savory caramelized onions, and creamy cheese with orzo pasta, perfect for a satisfying family meal.

Ingredients

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 1/2 cups orzo pasta
  • 4 cups chicken broth
  • 1 cup shredded Gruyere or Swiss cheese
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). In a large skillet, heat olive oil and butter over medium heat. Add onions and cook until caramelized, about 15 minutes.
  2. Add garlic and thyme, cook for another minute.
  3. In a large mixing bowl, combine diced chicken, salt, pepper, and a tablespoon of olive oil. Season and set aside.
  4. In a baking dish, spread caramelized onions on the bottom. Layer diced chicken over onions.
  5. Add orzo pasta evenly over the chicken and onions. Pour chicken broth over everything.
  6. Cover with foil and bake for 25 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until cheese is bubbly and golden.
