- 1 pound shrimp, peeled and deveined
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
- 4 cups prepared mashed potatoes
Instructions
- Cook the shrimp in a skillet over medium heat with 1 tablespoon of butter until pink and cooked through, about 2-3 minutes per side. Remove and set aside.
- In the same skillet, add remaining butter and minced garlic. Sauté for about 1 minute until fragrant.
- Pour in heavy cream and simmer for 2-3 minutes until slightly thickened. Season with salt and pepper.
- Add cooked shrimp back to the skillet, toss to coat in the garlic sauce.
- Serve the shrimp over a bed of warm mashed potatoes, garnished with chopped parsley.
