  • 2 pounds beef chuck, cut into chunks
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 2 large potatoes, peeled and diced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat oil in a large pot over medium-high heat. Brown the beef chunks until seared on all sides, then remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Stir in smoked paprika, cumin, and thyme, cooking for another minute.
  4. Add browned beef, diced tomatoes, beef broth, and potatoes. Bring to a boil.
  5. Reduce heat, cover, and simmer for 1.5 to 2 hours until beef is tender and flavors meld.
  6. Season with salt and pepper. Garnish with fresh parsley before serving.
