- 2 pounds beef chuck, cut into chunks
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 2 large potatoes, peeled and diced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat oil in a large pot over medium-high heat. Brown the beef chunks until seared on all sides, then remove and set aside.
- In the same pot, sauté onions and garlic until translucent.
- Stir in smoked paprika, cumin, and thyme, cooking for another minute.
- Add browned beef, diced tomatoes, beef broth, and potatoes. Bring to a boil.
- Reduce heat, cover, and simmer for 1.5 to 2 hours until beef is tender and flavors meld.
- Season with salt and pepper. Garnish with fresh parsley before serving.
Notes
- For extra depth, add a splash of red wine during simmering.
- Best served with crusty bread or dumplings.
