Ingredients

  • 1 pound Italian sausage
  • 1 package of potato gnocchi (16 oz)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach leaves
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil and grated Parmesan for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned. Remove and set aside.
  2. In the same pot, add chopped onion and garlic; sauté until translucent.
  3. Pour in chicken broth; bring to a boil. Add gnocchi and cook according to package instructions, about 3-4 minutes.
  4. Stir in cooked sausage, heavy cream, salt, and pepper. Reduce heat and simmer for 5 minutes.
  5. Add spinach and cook until wilted, about 2 minutes.
  6. Serve hot, garnished with fresh basil and Parmesan cheese.
