- 1 pound Italian sausage
- 1 package of potato gnocchi (16 oz)
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach leaves
- 1 small onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil and grated Parmesan for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned. Remove and set aside.
- In the same pot, add chopped onion and garlic; sauté until translucent.
- Pour in chicken broth; bring to a boil. Add gnocchi and cook according to package instructions, about 3-4 minutes.
- Stir in cooked sausage, heavy cream, salt, and pepper. Reduce heat and simmer for 5 minutes.
- Add spinach and cook until wilted, about 2 minutes.
- Serve hot, garnished with fresh basil and Parmesan cheese.
Notes
- Adjust the amount of garlic and herbs to taste.
- Use gluten-free gnocchi if needed.
- For a spicier version, add red pepper flakes.
