- 1 pound Italian sausage, sliced
- 1 package potato gnocchi (about 16 oz)
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach, chopped
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese, for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
- In the same pot, sauté diced onion and garlic until fragrant and translucent.
- Add chicken broth and Italian seasoning. Bring to a simmer.
- Stir in gnocchi and cook according to package instructions, about 3-4 minutes.
- Return sausage to the pot, then add heavy cream and chopped spinach. Simmer for another 3-5 minutes until heated through.
- Season with salt and pepper to taste. Serve hot, garnished with grated Parmesan cheese.
Notes
- You can substitute turkey sausage for a leaner option.
- For a dairy-free version, use coconut cream instead of heavy cream.
- Serve with crusty bread for a complete meal.
