Instructions
- Start by dicing the onion, mincing the garlic, and chopping the cauliflower. If using mushrooms, slice them thinly. This prep work makes the cooking process smooth and quick.
- In a skillet, heat the olive oil over medium heat. Sauté the onion and garlic until fragrant and translucent, about 3-5 minutes. This step enhances the flavor of your healthy slow cooker soup.
- Transfer the sautéed aromatics to your Crock-Pot Family-Size Slow Cooker. Add the chicken, chicken broth, cauliflower, mushrooms, thyme, salt, and pepper. Cover and set on low for 6-7 hours or high for 3-4 hours.
- Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return shredded chicken to the soup. Add the softened cream cheese and stir until fully melted and incorporated. For dairy-free versions, substitute with coconut cream.
- Add heavy cream or coconut cream to give the soup a rich, velvety consistency. Stir well and let it simmer for another 15 minutes to let the flavors meld.
