Creamy Keto Chicken Soup is a comforting and healthy slow cooker dish packed with tender chicken, creamy dairy, and wholesome vegetables. Perfect for low-carb and keto lifestyles, this rich and velvety soup is easy to prepare and full of flavor, making it an ideal weeknight dinner or weekend meal option.

  • Total Time: 4 hours 20 minutes - 7 hours 20 minutes
  • Yield: 6 servings

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts or thighs
  • 4 cups chicken broth (preferably homemade or low sodium)
  • 8 oz cream cheese, softened
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups chopped cauliflower florets
  • 1 cup sliced mushrooms (optional)
  • 1 cup heavy cream or coconut cream for dairy-free option
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Start by dicing the onion, mincing the garlic, and chopping the cauliflower. If using mushrooms, slice them thinly. This prep work makes the cooking process smooth and quick.
  2. In a skillet, heat the olive oil over medium heat. Sauté the onion and garlic until fragrant and translucent, about 3-5 minutes. This step enhances the flavor of your healthy slow cooker soup.
  3. Transfer the sautéed aromatics to your Crock-Pot Family-Size Slow Cooker. Add the chicken, chicken broth, cauliflower, mushrooms, thyme, salt, and pepper. Cover and set on low for 6-7 hours or high for 3-4 hours.
  4. Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return shredded chicken to the soup. Add the softened cream cheese and stir until fully melted and incorporated. For dairy-free versions, substitute with coconut cream.
  5. Add heavy cream or coconut cream to give the soup a rich, velvety consistency. Stir well and let it simmer for another 15 minutes to let the flavors meld.

Notes

  • You can use cooked leftover chicken for quicker preparation.
  • This recipe can be made dairy-free by substituting cream cheese and heavy cream with coconut cream or dairy-free cheese alternatives.
  • Feel free to adjust the seasoning with more herbs or seasoning to taste.
