- 8 oz (225g) pasta (penne or spaghetti)
- 2 cups fresh spinach, chopped
- 1 cup sliced mushrooms (button or cremini)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté until tender, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in heavy cream and bring to a simmer. Add grated Parmesan, stirring until melted and sauce thickens.
- Add chopped spinach and cook until wilted, about 2 minutes.
- Combine cooked pasta with the sauce, stirring well. Season with salt and pepper.
- Garnish with fresh parsley before serving hot.

- Use your favorite pasta shape for variety.
- Adjust cheese and cream for a richer or lighter sauce.
- Serve with extra parmesan and a side salad for a complete meal.
