  • 1 lb (450g) potato gnocchi
  • 1 cup fresh spinach, chopped
  • 1/2 cup basil pesto
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. Cook gnocchi in boiling water until they float, about 2-3 minutes; drain.
  3. In a large bowl, toss gnocchi with pesto, olive oil, salt, and pepper.
  4. Spread half of the gnocchi mixture in the baking dish. Top with chopped spinach and half of the cheese.
