- 1 lb (450g) potato gnocchi
- 1 cup fresh spinach, chopped
- 1/2 cup basil pesto
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- Cook gnocchi in boiling water until they float, about 2-3 minutes; drain.
- In a large bowl, toss gnocchi with pesto, olive oil, salt, and pepper.
- Spread half of the gnocchi mixture in the baking dish. Top with chopped spinach and half of the cheese.
- Repeat layers with remaining gnocchi, spinach, and cheese.
- Bake for 15-20 minutes until bubbly and golden on top.
Notes
- Feel free to add grilled chicken or mushrooms for extra protein.
- Use fresh pesto for the best flavor.
