Ingredients

  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup prepared sauerkraut, drained
  • 1 pound sliced corned beef, chopped
  • 1 cup shredded Swiss cheese
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat. Add chopped onion and sauté until translucent.
  2. Stir in garlic and cook for 1 minute.
  3. Add beef broth and bring to a simmer.
  4. Stir in sauerkraut and chopped corned beef, simmer for 10 minutes.
  5. Reduce heat to low, stir in heavy cream and shredded Swiss cheese until melted and smooth.
