- 2 tablespoons butter
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup prepared sauerkraut, drained
- 1 pound sliced corned beef, chopped
- 1 cup shredded Swiss cheese
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- In a large pot, melt butter over medium heat. Add chopped onion and sauté until translucent.
- Stir in garlic and cook for 1 minute.
- Add beef broth and bring to a simmer.
- Stir in sauerkraut and chopped corned beef, simmer for 10 minutes.
- Reduce heat to low, stir in heavy cream and shredded Swiss cheese until melted and smooth.
- Season with salt and pepper, serve hot garnished with fresh herbs if desired.
Notes
- You can substitute shredded cooked corned beef for sliced deli meat.
- For a thicker soup, add a bit of flour or cornstarch slurry.
