Ingredients

  • 20 large pasta shells
  • 1 lb (450g) mixed seafood (shrimp, crab, scallops)
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup ricotta cheese
  • 2 cups heavy cream
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley and lemon slices for garnish

Instructions

  1. Cook pasta shells according to package instructions until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add garlic and cook until fragrant, about 1 minute.
  3. Add mixed seafood and cook until seafood is opaque and cooked through, about 3-4 minutes. Season with salt, pepper, and Italian seasoning.
  4. In a bowl, combine ricotta, heavy cream, Parmesan, and 1 cup mozzarella. Mix until smooth.
  5. Fold in cooked seafood mixture into the cheese mixture.
  6. Spoon the seafood and cheese filling into each cooked shell and place into a baking dish.
  7. Top with remaining mozzarella cheese and bake at 375°F (190°C) for 20 minutes until bubbly and golden brown.
  8. Garnish with fresh parsley and serve hot with lemon slices.
