- 8 oz spaghetti or your favorite pasta
- 2 cups fresh spinach leaves
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
- Stir in the spinach and cook until wilted, about 2 minutes.
- Combine the cooked pasta with the vegetable mixture, tossing to coat evenly.
- Sprinkle with Parmesan cheese, salt, pepper, and red pepper flakes if using. Serve hot.
Notes
- You can add cooked chicken or shrimp for extra protein.
- Use dairy-free cheese to make it vegan.
