- 20 large pasta shells
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Cook pasta shells according to package instructions, drain and set aside.
- In a skillet, heat olive oil over medium heat, sauté garlic until fragrant, then add chopped spinach and cook until wilted. Remove from heat and let cool.
- In a bowl, combine ricotta, mozzarella, Parmesan, sautéed spinach, salt, and pepper. Mix well.
- Stuff each cooked shell with the spinach and ricotta mixture. Place stuffed shells in a baking dish.
- Bake uncovered for 20-25 minutes until bubbly and golden on top. Garnish with fresh basil if desired.
Notes
- You can add a pinch of red pepper flakes for some spice.
- For a richer flavor, use full-fat ricotta and mozzarella cheese.
