Ingredients

  • 20 large pasta shells
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Cook pasta shells according to package instructions, drain and set aside.
  2. In a skillet, heat olive oil over medium heat, sauté garlic until fragrant, then add chopped spinach and cook until wilted. Remove from heat and let cool.
  3. In a bowl, combine ricotta, mozzarella, Parmesan, sautéed spinach, salt, and pepper. Mix well.
  4. Stuff each cooked shell with the spinach and ricotta mixture. Place stuffed shells in a baking dish.
  5. Bake uncovered for 20-25 minutes until bubbly and golden on top. Garnish with fresh basil if desired.

Notes

  • You can add a pinch of red pepper flakes for some spice.
