- 1 tablespoon olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups vegetable or chicken broth
- 1 cup fresh basil, chopped
- 1 teaspoon Italian seasoning
- 1 package (9 oz) tortellini (cheese or spinach)
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
- Add minced garlic and cook for another minute.
- Stir in crushed tomatoes, broth, Italian seasoning, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 10 minutes to develop flavors.
- Add tortellini and cook according to package instructions, about 3-5 minutes.
- Stir in heavy cream and chopped basil. Warm through and serve hot.
Notes
- You can substitute heavy cream with coconut milk for a dairy-free version.
- For added flavor, sprinkle with grated Parmesan cheese before serving.
