- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic and sun-dried tomatoes; sauté until fragrant, about 2 minutes.
- Stir in butter beans and Italian seasoning; cook for 5 minutes, stirring occasionally.
- Add spinach and cook until wilted, about 2 minutes.
- Sprinkle with Parmesan cheese, season with salt and pepper, and serve hot.
Notes
For added flavor, sprinkle with red pepper flakes or garnish with fresh basil. Can be served over rice or crusty bread for a hearty meal.
