- 1 lb cooked chicken, shredded
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chiles
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1 cup sour cream or Greek yogurt
- Salt and pepper to taste
- Fresh cilantro and shredded cheese for garnish
Instructions
- In a large pot, sauté diced onion and minced garlic until translucent.
- Add cooked shredded chicken, green chiles, cumin, oregano, chili powder, paprika, salt, and pepper. Cook for 2 minutes.
- Pour in chicken broth and bring to a simmer.
- Add white beans and cook for 10 minutes.
- Stir in sour cream or Greek yogurt until well combined and creamy.
- Serve hot, garnished with fresh cilantro and shredded cheese.
Notes
- Adjust spice levels to taste by adding more chili powder or hot sauce.
- For a thicker chili, mash some of the beans before adding.
