Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, beat eggs, sugar, oil, and vanilla until smooth.
- Gradually add dry ingredients to wet mixture, mixing well. Fold in grated carrots.
- Pour batter into prepared dish and bake for 35-40 minutes or until a toothpick comes out clean.
- Allow cake to cool completely in the pan.
- In a mixing bowl, beat cream cheese and butter until fluffy. Gradually add powdered sugar until smooth.
- Spread frosting evenly over cooled cake. Top with chopped walnuts and refrigerate for at least 1 hour before slicing.
