- 1 cup fresh cherries, pitted
- 1 tablespoon cherry syrup (optional)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk eggs and sugar until fluffy. Add vanilla extract.
- Sift flour and baking powder into the mixture and fold gently.
- Pour batter onto prepared baking sheet and bake for 12-15 minutes until golden.
- Meanwhile, beat cream cheese, powdered sugar, and lemon juice until smooth.
- Spread cream cheese mixture over the warm sponge, then roll up with the parchment paper into a log. Cool completely.
- Unroll the cake, spread with additional cream cheese if desired, then top with cherries and cherry syrup.
- Re-roll the cake, slice, and serve garnished with cherries and mint leaves.
Notes
- Ensure the sponge is not overbaked to keep it flexible for rolling.
- Chill the cake roll before serving for best slices.
- You can substitute fresh cherries with preserved or canned cherries.
