- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 8 oz dark chocolate, melted and cooled
- 3 large eggs
- 1 cup fresh raspberries
- 1/2 cup sour cream
- 2 tablespoons powdered sugar
Instructions
- Preheat oven to 325°F (160°C). Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan to form the crust. Bake for 10 minutes.
- In a large bowl, beat cream cheese and sugar until smooth. Mix in vanilla and melted dark chocolate until well combined.
- Add eggs one at a time, mixing after each. Gently fold in sour cream. Pour batter over the crust.
- Scatter fresh raspberries on top of the filling. Bake for 50-55 minutes until set.
- Allow to cool completely, then refrigerate for at least 4 hours. Garnish with extra raspberries before serving.
