This rich and creamy chocolate raspberry cheesecake combines a smooth dark chocolate filling with fresh raspberries, nestled on a crunchy graham cracker crust.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 8 oz dark chocolate, melted and cooled
  • 3 large eggs
  • 1 cup fresh raspberries
  • 1/2 cup sour cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat oven to 325°F (160°C). Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan to form the crust. Bake for 10 minutes.
  2. In a large bowl, beat cream cheese and sugar until smooth. Mix in vanilla and melted dark chocolate until well combined.
  3. Add eggs one at a time, mixing after each. Gently fold in sour cream. Pour batter over the crust.
  4. Scatter fresh raspberries on top of the filling. Bake for 50-55 minutes until set.
  5. Allow to cool completely, then refrigerate for at least 4 hours. Garnish with extra raspberries before serving.
