Instructions
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, cinnamon, and nutmeg.
- In a separate large bowl, beat butter and brown sugar until fluffy.
- Add egg, vanilla, and apple cider; mix well.
- Gradually add dry ingredients to wet ingredients, stirring gently.
- If desired, fold in chopped apples for extra texture.
- Scoop batter onto prepared baking sheets and bake for 10-12 minutes.
- Allow to cool before filling with cream frosting.
Notes
- For a richer flavor, substitute some of the apple cider with apple brandy.
- Ensure cupcakes are completely cooled before frosting.
