Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Add egg and vanilla, beating well.
- In another bowl, whisk together flour, baking powder, and cinnamon. Gradually add to wet ingredients, mixing just until combined.
- Fold in chopped apples.
- In a small bowl, mix sugar and cinnamon for coating. Shape dough into 1.5-inch balls and roll in cinnamon sugar mixture.
- Place coated dough balls on prepared baking sheets, spacing about 2 inches apart.
- Bake for 10-12 minutes, until edges are golden brown.
- Allow cookies to cool on wire racks before serving.
