  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 16 oz cream cheese softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 cup sour cream
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter; press into the bottom of a 9-inch springform pan.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well.
  3. Stir in vanilla, cinnamon, nutmeg, cloves, sour cream, and grated carrots. Fold in chopped walnuts if using.
  4. Pour the batter over the prepared crust. Bake for 50-60 minutes until the center is set.
  5. Allow to cool completely, then refrigerate for at least 4 hours. Top with cream cheese frosting and garnishes before serving.
