- 2 1/2 cups all-purpose flour

- 1 cup unsalted butter, chilled and cubed
- 1/4 to 1/2 cup ice water
- 5-6 medium apples (Granny Smith or Fuji), peeled and sliced
- 3/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, combine flour, salt, and sugar. Add chilled butter and cut in with a pastry cutter until mixture resembles coarse crumbs.
- Gradually add ice water, mixing until dough comes together. Divide in half, shape into disks, wrap in plastic, and refrigerate for at least 1 hour.
- Preheat oven to 375°F (190°C). Roll out one disk on a floured surface and fit into a 9-inch pie dish.
- In a bowl, mix sliced apples, sugar, cinnamon, nutmeg, and lemon juice. Pour into the prepared pie crust.
- Roll out the second disk and cut into strips for a lattice crust. Place strips over the filling in a lattice pattern and trim edges.
- Brush the top with beaten egg to give a shiny finish. Bake for 50-60 minutes until crust is golden and filling is bubbling.

- Use crisp, tart apples like Granny Smith for best flavor.
- Chill the dough thoroughly before rolling out for easier handling.
- Optional: sprinkle sugar on top before baking for a sweeter crust.
