- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
- 2 cups cooked shredded chicken
- 1 (16-ounce) package potato gnocchi
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion, garlic, carrots, and celery; sauté until vegetables are tender.
- Pour in chicken broth and bring to a boil.
- Add cooked chicken and Italian seasoning; simmer for 10 minutes.
- Stir in gnocchi and cook according to package instructions, about 3-4 minutes.
- Reduce heat and stir in heavy cream; season with salt and pepper.
- Simmer for another 5 minutes until heated through.
- Garnish with chopped parsley before serving.
Notes
- For extra flavor, add a splash of lemon juice or grated Parmesan cheese.
- You can use rotisserie chicken for convenience.
