- 4 slices ham
- 1 cup grated Gruyere or Swiss cheese
- 2 large eggs
- 1 tablespoon Dijon mustard
- 1 teaspoon black pepper

Instructions
- Preheat the oven to 400°F (200°C). Roll out the puff pastry sheet on a baking parchment-lined baking sheet.
- Spread Dijon mustard evenly over the pastry surface.
- Layer ham slices and grated cheese on half of the pastry, leaving a margin around the edges.
- Fold the pastry over the filling to form a rectangular shape and seal the edges.
- Bake in the oven for 15-20 minutes until golden and flaky.
- While baking, fry eggs sunny-side-up in a non-stick pan with a little butter or oil.
- Remove the baked pastry, slice, and top each piece with a fried egg. Garnish with parsley and black pepper before serving.

- You can substitute Gruyere with Swiss or cheddar cheese.
