- 4 boneless chicken breasts, cut into chunks
- 1 cup tzatziki sauce

- Fresh cucumber and dill for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Spread cooked rice evenly in a baking dish.
- Season chicken chunks with garlic powder, oregano, salt, and pepper.
- Arrange seasoned chicken over rice.
- Drizzle olive oil over chicken pieces.
- Bake uncovered for 25-30 minutes until chicken is cooked through.
- Remove from oven and top with tzatziki sauce and fresh herbs.
- Return to oven for an additional 5 minutes to meld flavors.
- Serve hot garnished with cucumber slices and dill.
Notes
- You can substitute cooked quinoa or couscous for rice.
- Adjust seasoning to taste and add chopped tomatoes or olives for extra flavor.
