- 1 cup graham cracker crumbs
- 3 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 2 medium apples, sliced
- 1/4 cup brown sugar
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 325°F (160°C). In a bowl, mix graham cracker crumbs with melted butter until combined. Press into the bottoms of mini muffin tins lined with paper liners.
- In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream and vanilla.
- Pour the cream cheese mixture over the crusts in the muffin tins.
- In a skillet, cook sliced apples with brown sugar and cinnamon until soft and caramelized.
- Spoon caramelized apples over each mini cheesecake filling.
- Bake for 20-25 minutes until set. Allow to cool before serving.
Notes
- For best results, use room temperature cream cheese for a smooth filling.
- Adjust cinnamon and sugar in toppings to taste.
- Chill cheesecakes for at least 2 hours before serving for optimal texture.
