- 1 pound boneless, skinless chicken breasts or thighs, sliced
- 3 bell peppers (red, yellow, green), sliced
- 1 large onion, sliced
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Lime wedges and chopped cilantro for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a small bowl, mix chili powder, paprika, cumin, garlic powder, salt, and pepper.
- In a large bowl, toss chicken slices and sliced vegetables with olive oil and spice mixture until evenly coated.
- Spread the mixture on the prepared sheet in an even layer.
- Bake for 20-25 minutes or until chicken is cooked through and vegetables are tender and slightly charred.
- Serve hot with lime wedges and chopped cilantro.
Notes
- Feel free to add sliced jalapenos for extra heat.
- Serving with warm tortillas makes a complete fajita meal.
