- 1 cup corn kernels
- 1 bell pepper, diced
- 1 avocado, sliced

- Fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
- Olive oil
Instructions
- Season chicken breasts with salt, pepper, and a drizzle of olive oil. Grill until cooked through and slice.
- In a bowl, combine cooked rice, black beans, corn, diced bell pepper, and cilantro.
- Divide the rice mixture into bowls. Top with sliced grilled chicken, avocado slices, and shredded cheese.
- Squeeze lime juice over each bowl and garnish with additional cilantro if desired.

- Feel free to add salsa or sour cream for extra flavor.
- You can substitute grilled beef or tofu for a different twist.
