Ingredients
Scale
- 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
- 1/2 cup ranch dressing
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a bowl, combine ranch dressing, minced garlic, Italian seasoning, salt, and pepper. Add chicken pieces and marinate for at least 30 minutes.
- Preheat the grill to medium-high heat. Thread the marinated chicken onto skewers.
- Grill skewers for 10-12 minutes, turning occasionally, until cooked through and slightly charred.
- In a small bowl, mix grated Parmesan with a tablespoon of olive oil to create the Parmesan topping.
- Once grilled, brush the skewers with remaining ranch marinade, sprinkle with Parmesan mixture, and garnish with chopped parsley.
- Serve hot with lemon wedges or your favorite sides.
Notes
- Feel free to add vegetables like bell peppers or onions to the skewers for added flavor and color.
- Marinating longer enhances flavor; up to 2 hours is ideal.
