- 4 large bell peppers, halved and seeded
- 1 lb ground beef or chicken
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- 1/2 cup salsa
- Fresh cilantro and sour cream for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, cook ground beef with diced onion and garlic until browned. Mix in taco seasoning and cooked rice.
- Fill each bell pepper half with the meat mixture, then top with shredded cheese.
- Place stuffed peppers in a baking dish and bake for 25-30 minutes until peppers are tender and cheese is melted.
- Garnish with cilantro and serve with salsa and sour cream.

- Feel free to use ground chicken or turkey as a leaner option.
- Add diced tomatoes or jalapenos for extra flavor.
