- 4 salmon fillets
- 1 large ripe mango, diced
- 1 red bell pepper, diced
- 1 small red onion, minced
- Fresh cilantro, chopped
- Juice of 1 lime
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat grill or oven to 400°F (200°C).
- Season salmon fillets with salt and pepper.
- Cook salmon on grill or in oven until flaky, about 12-15 minutes.
- In a bowl, combine diced mango, red bell pepper, red onion, cilantro, lime juice, olive oil, salt, and pepper to make the salsa.
- Serve the cooked salmon topped with fresh mango salsa and garnished with additional cilantro and lime wedges.
Notes
- Adjust spiciness by adding chopped jalapeños to the salsa.
- For a grilled presentation, marinate salmon with citrus and herbs beforehand.
